We have a requirement to keep track of both individual clients and organization clients. I am not sure which account model to use. Also in case I choose one to one model, will I be able to create organization accounts and vice versa.

@Neha Dabas here is the documentation on the different NPSP Account Models if you haven't seen it yet. We do recommend the Household Model, which is the default in the NPSP Trial experience. Note that having the Household Model enabled is a requisite for some of the more popular new tools that have come out in the NPSP lately, such as #Customizable Rollups and #Batch Gift Entry, which may make the decision a bit easier.
