1. I have replaced both First Name placeholders and the single Next Check In Date with the appropriate Insert Resource -> Contact -> "field". The response looks great, no extra characters, spacing, ... .
2. I have toggled on / off / on ... multiple times with the main Agentforce Agents toggle, leaving it on.
3. I have activated / deactivated / reactivated the template.
4. I have relaunched the dev org from the module.
5. I have let it sit for 15 minutes before checking the challenge.
6. I went through all the steps in the main part (creating the Guest Experience Compensation template) with no issues.
...nothing has worked.

The issue was resolved for me with time (overnight) and possibly logging out. Logged back in this morning, toggled the Agentforce Agent again, and all good.
