Custom Object - Profile/Sharing Settings

Can I make an object visible so users can create a record, but take away visibility to the record once it has been saved?  Case in point, I want all employees to have read/write access when creating a confidential record, but I do not want others in the firm to be able to see the record afterwards besides Admins.  Not sure if this can be done thru Profile or sharing settings.

    Could you put a process on it to change the record owner after creation and then put sharing rules around it so that it's private and only shared with admins? The new record owner would have to be an admin...
