You can report on any subset of records you need to, providing you can add the appropriate filters.
For example if yo just wanted a report of a single Account you could filter by the Account Name = <AccountName>, providing that all your account names are unique.
A better and more certain way of reporting only the single record you need would be to use the record ID. You can find these in the URL when you are looking at a record page, will be sandwiched between two forward slashes and look something like 0061q000005gHlQAAU.
Select the Opportunity ID field as you filter, enter the ID you have copied form the record and viola! Your report will only return data for that specific record.
