We are currently using Sales- and Account teams. I want to delete these teams.
Is there any risk?
I want everybody to be able to see all opportunities and Accounts.

If you have a Public Sharing model (Org Wide Defaults) I do not belive there is any adverse impact on deleting the teams, except where you may report on team records.
