The drop down windows in our Standard and Custom Objects for one of our users quit working.
As as Admin I can login as the user and the drop downs work fine.
Also, when I assign another user the same Role and Profile the drop downs work fine, they just don't work for this one user.

I would check the browser that they are using. See if you can reproduce it from the machine that they are working on. Or, ask them to try a different browser.
