How do you sort by field in default properties?

I'd like to sort a field by another field, which can surely be done when you use that field in a viz, but not as default (in default properties). I want a field sorted by another field in the filter pane. Is there any way to accomplish that? I can set the default sorting manually, but as the data gets updated (on the tableau server) newer values wouldn't be sorted the way I want.

When you look at the default sorting, you won't see the option of sorting by field.
