I have data sources that I am processing using Tableau data prep creating flows. I want to be able to automate flagging fields as dimensions (integer IDs for example) without having to do this every time we select that datasource for a new workbook.

Tableau uses field names and field values to infer data type. If you add the word ID to your field names using Prep, they should read as dimensions even with all numbers for values. This Excel spreadsheet copied and pasted into Tableau Desktop does the right thing. You can experiment with other field names.
