Does anyone know of a way to let non-admins edit the Product Subscription Type and Subscription Type fields on contract line items? We at times have to manually create contract line items and those two fields are the only two that non-admins are not allowed to edit. They get a 'Can't Update the Subscription Type' error. This is the error regardless of the picklist values chosen.

I do not know it you experimented it the same way, but the snag on Subscription Type / Product Subscription Type is linked to a know issue. It seems to have been solved and deployed on CPQ-216.10.2 version (which is quite old ; so I assume you have already refreshed you CPQ package).
For information, there are other known issues I found about these CPQ fields (https://issues.salesforce.com/issue/a028c00000qQ5CcAAK/cpq-product-validation-is-hit-when-editing-subscription-type-to-valid-values-when-enable-evergreen-subscriptions-true) but I do not think, from what I see, that is what you experiment.
