But then we realized we wanted a total of 3 potential options: polls open, polls close, not open. I now want the formula field to evaluate the 2 date/time fields so if the time now is between the 2 date/time fields the formula field would be polls open, if the polls close date has passed the field would read polls closed and if the time now falls outside of these 2 scenarios the field would read not open. I tried rewriting the formula but kept getting errors. Any help would be greatly appreciated!

Hello Kimberly, You can try this:
IF( NOW() < Polls_Open__c, "Not Open",
IF(Polls_Close__c <= NOW() , "Polls Closed",
"Polls Open"))
You just need to add a clause for before the polls open.I bolded your original code, but it looks for the Polls Open before checking your formula.
