Can you calculate the date of when someone updates a field usuing a formula?

I'm currently usuing this formula to calculate when our field "Prospect Status" is changed to "On-Hold". This way, I can send out a work flow rule that creates a follow up task 30 days after the opportunity owner puts the opp on hold.

 

However, I don't believe this formula will work. I think it will change to the current date everyday that the opp is on hold, instead of documenting the day that the individual updated the opp.

 

IF( ISPICKVAL(Prospect_Status__c , "On-Hold") ,  Today() ,null)

 

Can someone help me??

    I have the time based workflow rule that triggers the email alert 30 days after someone has changed the “prospect status” field to “On-Hold” on my opportunity page. Will the triggered email provide a link to the opportunity whose “Prospect Status”  was changed to “On-Hold”?
