Matrix Reports only have two categories on the Rows. So you can have Opportunities, then Products. Or you can have Sales People, and Opportunites. You can't have Sales Person, Opportunity and Product all together though.
One way of doing it might be to Sum each product within an opportunity, and have that in the actual matrix, as only items that can be summed can appear there. Then your two Row options can be Sales Person, Opportunity Name.
