You can delete individual records from a datastream following the process outlined here

Note each connector behaves differently and conditional deletes are only supported for the ones outlined in the help doc above

You can also delete the data stream which will delete all records originating from that data stream.

You can use starter data bundles for Marketing Cloud Email Studio, MobileConnect, and MobilePush. We use a data cloud bundle to get the combined data based on 

Campaigns and Journeys data bundle

Contact data bundle 

Engagement data bundle 

But in the case of data extension, you can get the data of individual data extension.

Before you delete this data stream you need to remove the mappings that are created by the data bundle and the underlying data lake object of all of its dependencies. When attempting to delete a mapping that is mapped to a primary key field on a Data Model Entity in Salesforce Data Cloud using the "Manage mapping" button, the error "Please try again.

To remove primary key mappings from a data model entity, click the "Remove Mappings" button from the Data Model Entities screen on the right-hand side. Note this removes all mappings from the Data Stream to the selected Data Model Entity.

Although the S3 connector does support conditional deletion, which means that you can delete the data stream without implicitly deleting the underlying DLO. Refer to both links for a better understanding of how to delete data stream.
