I’m working on the Coffee Sales dataset for my visualization assignment.

I’d love to get some feedback on my chart:
1) Does my color scheme make it easy to distinguish between coffee types?
2) Is the title “Total Sales by Coffee Type” clear and appropriate?
3) Should I add value labels (numbers on bars) to improve readability?

I think your chart is a good start. If this were on a dashboard, and you were going to talk about the top 2, I think highlighting them is valid, but I'd be careful not to have the colour orange mean more than one thing if you add more charts.
For your y-axis, I'd have the label as "Total Sales", or something that is more explicit about what the units are.
Rotated labels are _generally_ frowned upon in design so, since your x-axis labels are relatively long, I would consider using a horizontal bar chart instead of vertical. As Etsuro has suggested, you could then make the font a bit bigger, since the coffee names are the big piece of information in your chart.
One of the things I always look for that make a dashboard better, is use of the tooltips. Your tooltips don't add anything that isn't already available without them:
I would also choose between either bar labels, or a y-axis, having both creates redundancy in your chart, and visual clutter. If the title was "Total Coffee Sales by Type", then I would remove the y-axis, because now I've told the user what the units are (I'd have a currency sign as part of the labels), without that, I don't know if 26,875 is a dollar amount, or a number of coffees sold. You could have your description of the top two as part of your commentary with additional information, e.g. "Lattes and Americanos, the top selling coffee types with a combined market share of XX%, are ... <some other information from your dashboard>"
