Is there a way to color the row header (e.g. Product and Fruit) as how the pane does in the example shown below?

I don't know if this is what you have in mind, but here's an approach to your problem. In your example it appears that you are using a lighter color for the Vegetable category. If you simply change the order of the categories, so that [Fruit] comes before [Product] on your Rows shelf, and then change the shading formatting to include all but the final level, and set shading color to whatever you would like, then you might get something like this:
I know that's not exactly what you have in mind, and will only work when you have only two categories in the [Fruit] field, but I thought it might help get you to a workable solution.
