In the workbook attached, I managed to create a graph and 3 shapes above that are used as filters for each country.
The part I'm missing is how is it possible to click on an image to filter the graph, as well as the filter on the left?
For now, if I click on the shape for France, the graph only shows France, but the filters on the left still shows all values

Yes you can do this.
When you first trigger an action, Tableau builds this as a set filter. You can see this if you go to any of the target sheets
In your dashboard you can expose this filter (rather than the regular country filter) and not it will update from an action. You can also (like any filter) apply it to other sheets.
