I am trying to get my new Tableau workbook to align with an older Tableau workbook and just need a quick pointer. I am struggling to figure out how to get the columns on my new Tableau workbook to break out in the "Number Of Records" and "Amount" buckets as shown in the older Tableau workbook. See attached file for a screenshot of both so you can see what I am talking about. I thought that the "Measure Names" thing in the column section would have done it but apparently not.

You'll need to use your Measure Names & Measure Values fields (more info here: https://help.tableau.com/current/pro/desktop/en-us/datafields_understanddatawindow_meavalues.htm)
The easiest way to get the structure you described would be to drag the Number of Records field from your Data Pane onto the Amount Field present in your worksheet (Columns).
