not sure if it was deleted or not there but I do not see the flow for guest check-in.
I could create new but I am not sure what the flow looks like to create from scratch...do I just wait for my session to expire and wait to start again or is there a more elegant solution?

If the create guest check-in is deleted, the flow cannot be restored.
I would suggest trying a new playground
Try disconnecting the current playground and creating a new one.
