I have recently completed the course "MuleSoft.U Development Fundamentals (April 12, 2017 - June 7, 2017)" but have not received, as promised an email containing exam vaucher.

You should have received your voucher on email the following day after the last week was made available (so Thursday 1st). You don't have to wait until the 7th of June. If you have not received it send an email to training@mulesoft.com
