We have a new NPC instance. I have followed the setup instructions - https://help.salesforce.com/s/articleView?id=sfdo.npc_set_up_nonprofit_cloud.htm&type=5
and turned on most features. I turned on Provider Management and now see most objects related to this solution, but I do NOT see Person Employment or Party Income. Is there something special related to those objects? Did I miss part of the setup?

Thanks for that link, it was helpful, so by taking a look at the Provider Management Data Model
looks like the Person Employment and Party Income objects are both related to the Participant object through a Lookup relationship. Specifically, the Participant object has a required lookup field for each of those objects.
Can you try looking in both the Object Manager and the Schema Builder for these objects? Or try navigating to your profile in setup and ensure your profile has access to the objects.
