The errors have been thrown usually after selecting the CRM data source except the one time I got past that screen and selected the knowledge bundle and it said something about no data being present.

Hi @Pamela Coupar I am a member of Trailhead Help, Apologies for the inconvenience.
It seems like a metadata issue. Could you please re-do the module in the New Custom Data Cloud Playground.
Kindly follow the steps below to disconnect your current Custom Data Cloud Playground and create a new one.
- Go to a standard playground badge like this one: https://trailhead.salesforce.com/content/learn/projects/configure-a-net-zero-cloud-org/create-net-zero-cloud-profiles-and-users
- Scroll to the bottom and click the 3 dots next to the playground listed
- Click Manage Orgs
- Click Create Playground
- When it is made, refresh the page and you should be able to click Disconnect next to the Data Cloud Playground Org (org starting with Epic.....)
Post these steps, navigate to https://trailhead.salesforce.com/content/learn/projects/unstructured-data-in-data-cloud/ingest-knowledge-article-data , refresh the page and you should be able to create a new org.
