Encryption Statistics are useful but provide no way to report or export the list of fields.
Is there a way to retrieve a list of all encrypted fields in the org other than a Describe query one object at a time?

While you can't currently report / export the statistics themselves, if you create a custom report type with Entity Definition as the primary object, and Field Definitions, then Entity Particles as related objects, you'll be able to create reports based on the "Is Encrypted" boolean, with "Encryption State" representing the selected Encryption Scheme for the fields.
Side note: We're actively working on making this easier for customers who have Security Center by providing a new metric to track, alert, and export this data, but for those without it, you should be able to create the above mentioned Report Type and run with that for now.
