Are you getting error messages? How do you know it's not working? You certainly could create a variable and assign the email address to the variable, but it should not be necessary.
The assignment that you are showing in your screen is adding email address text strings to a Text Collection variable. You can also add a text string directly to the collection without adding it to a variable first.
