When I receive a pardot email notification, I see that there's "View prospect" that redirects to the classic pardot, and the "View prospect in CRM". I was wondering if it was possible to change the link of "View Prospect" ? If we do, where can I do that ?

@Terry Cole is right, you cannot modify the content of this automated Emails.
There is a Formula allowing to convert a classic Pardot Link to a Lightning Pardot Link (check details from this article from @Alexandre Ruiz).
