We have a lot of orders for the month that are showing a status of NEW even tho they were placed early in the month. What would be the reason that they didnt get updated to completed?

The status NEW is the regular status for B2C Order once placed in the system.
The status OPEN is only updated to when someone "open" the order details.

Any additional order status depends on your order flow and project.
