Hi Madhuri,
There is no way to do this directly, since open rates are stored as overall fields thanks to Engagement History. You best shot is to use the Dataset Prospect & Activity provided with B2BMA which records all interactions at the Prospect Level. You may able to build a table report from it containing the date you are looking for (displaying on Leads or Contact, or as a Prospect Field in Pardot) would then need some devs.
So no easy way to do this I'am afraid.
