I want to log some information from a non-scheduled meeting that does not generate any further task activity. I don't want to use Log a Call. I'd like to create a "Log a Meeting" activity object which includes Activity type of meeting. Subject = text meeting topic. I use the Professional Edition of SF.

Add your value “Meeting” to the Type picklist field on Task.
Then create a new quick action for your type of Task and add it to the Mobile and Lightning Actions part of your page layout.
