Is there a way to have different values in the LEad Source field show on the Lead vs Contact vs Opportunity? We have some situations where we only want the stage to appear on the Opp.

If I understand correctly, you're trying to pull in the lead source from lead to contact and opportunity, but it should show up only if certain specific values are selected. My initial idea would be to build a picklist similar to the one on lead with the values that you want to show. You can restrict the picklist value to not allow any data outside of these values. This will make sure that only those values which you allow get transferred. The field will not accept any value outside of these and will show blank for those.
