Can I have a case open to enable this feature once it gets rolled out into our sandboxes on May 6th? Or should we be contacting our success manager to have this enabled?

You can self-enable custom address fields in Summer ’22 through an option in Setup. We highly recommend that you review the limitations & requirements before you enable it. (The big requirement is setting up the State & Country/Territory picklists, if you haven't done so already.)
We'll post here when the documentation has been updated for Summer ’22, including the instructions on how to enable it.
