How are other people tracking engagement now that Apple has rolled out MPP? This article suggests using a "Thumbs up or Thumbs down". How do you add that in a Pardot email?

Create a thumbs up image and a thumbs down image and create custom redirects to record the clicks. It would be similar to setting up survey responses in an email like this: https://pardotgeeks.com/2021/09/capture-survey-feedback-directly-in-a-pardot-email/
Watch out for bot clicks though, some prospects may "click" on both. Then if you have predominately thumbs down, I would consider changing it up.
As for changing the way you track, I would look at what email clients are opening the emails (some companies still have predominately Outlook and little Apple Mail), then adjust accordingly. This is in the sent email report under Email Client Breakdown tab (if you have Advanced Email Analytics Reports). If you have predominately Outlook, I wouldn't do much right away. Monitor your open rates to see if you are affected. Long term though, look into any automations running with an open trigger and I would definitely look into switching to some other form of metric, like clicks or conversions, from the email.
