Configure 2 different Sales process for a Company who are into selling both Product and Services.

About which layout you should use, I'm afraid you are the only one who can answer this question. However, let me try to explain how to decide and set this up.
First thing you must do is create two dedicated Page Layouts for both procesees; considering the ones you show are the standard ones, and I don't think they are relevant for your use case.
Note that the Page Layout that is displayed to a user when opening a record is based on the combination of his user Profile and the record's Record Type.
So If you want a specific layout for Product Opportunities and another for Service Opportunities, you should do the following:
- Create a "Product Opportunity" Page Layout
- Create a "Product Opportunity" Sales Process
- Create a "Product Opportunity" Record Type
- On the Record Type, select the "Product Opportunity" Sales Process
- Apply the "Product Opportunity" Page Layout to all Profiles
- Create a "Service Opportunity" Page Layout
- Create a "Service Opportunity" Sales Process
- Create a "Service Opportunity" Record Type
- On the Record Type, select the "Service Opportunity" Sales Process
- Apply the "Service Opportunity" Page Layout to all Profiles
Note also that:
- Creating two Page Layouts is required only if the field / sections displayed must differ for each process
- Creating two Sales Process is required only if different Opportunity Stages are applicable to each process
