We want to use a form at an event.
We have contacts that are assigned to various members of our team
how do we get the form to add a salesforce task to whomever that contact is linked to on our side? Currently, I can only see when assigning a user it gives me one option.

You can leverage assigning Tasks to a Queue. Queue can have all the users you want to assign the task. Below link could help
