format date time output with formula?

I am trying to set up sending out text reminders and getting responses using twilio. Easy enough, except the date/time field for the shift start date/time is in yyyy-mm-dd GMT format. Which i get why, but it seems there really should be a way to transform this with a formula. I keep hitting a road block though. does anyone have any ideas.

    I've come across this issue before too and would love an easy way to solve it. The above formula looks pretty complicated for quite a simple requirement.​
