We have an NPSP pack installed, however, we also have a Sales team which is going to be purely Salesforce. I thought I saw a "default" Opportunity record type, and now I can't see it anywhere. I wouldn't want to rebuild standard Salesforce functionality... Thank you all in advance.

The default record type for admin profile is : Donation by default but you can always change it based on profiles.
The "Master" record type : If you select the Master record type, you cannot include custom record types.
In case you want your Sales team not to use core NPSP than create a Sales profile and create a new record type and page layout on opportunity object with related Sales fields (Non NPSP Fields) and assign that to the new record type and create a sales process and include custom stagename picklist values. Further you might need a lot of customisation to make it to work.
