I have a new volunteer who is going to manage the grant accounts. I only want them to have access to the grantmaker accounts and not all our contacts how do I limit what they can see?

Hi @Jo Smith you would need to set the sharing settings for Contacts to Private and then grant access to any users who should have access to contacts that they don't own through the role hierarchy or sharing rules. Or you could remove access to the Contact object altogether at the profile level. The "Who Sees What" video series is a great resource for understanding how the many layers of Salesforce security work together.
