I'm trying to understand the advantage of using GAU custom object versus simply creating a picklist field on the opportunity object? I found an article regarding allocation of donations, its that the main advantage?

GAUs also allow you to create new accounting units on the fly, without updating picklist fields. If you have many accounts, or they change often, it will be easier to use GAUs.
