Hello,
Can Lead Source picklist be mapped onto Opportunity upon conversion? If this is possible, I do not see it (Lead Source) as an option when I click on Map Fields on the Lead object.

Only the custom fields can be mapped. As lead source is a standard field that is not possible, you need to write a before trigger of flow to achieve this.
