When a company has a private sharing model, what does this mean exactly? For example, does it mean certain fields are only viewable to certain profiles?

When I google private sharing model, the results I get explain the different levels of security such as org, objects, profiles, field level security, sharing rules, etc. but I haven't found anything that explains private sharing model.

Generally speaking a Private Sharing Model means only the User who owns a record can see or edit it (the whole record, not specffic fields on it)
