Hello Shellie,
It seems that you are building the chart in Salesforce CRM and not Einstein Analytics. The comments I provided above were for the latter.
But I tried replicating the scenario you show above. For me, the donut chart shows the right center value. You might wanna check the underlying report once for any filters.
Also, you could click enable Small groups into "Others" and increase the Max Values Displayed to see if the center value changes. Another thing I'm noticing is that the values in the 2 screenshots you have added are different. Feel free to post a screenshot of the underlying report if you are still struggling with this.
