is there a way, to add a button to Opportunity, which opens the "New Deal" Window, and which has already most of the information (from the Opportunity) filled out?

Hi Daniel - absolutely, you can use a quick action for this. Under your opportunity object, in the buttons, actions, links menu, you can create a new action.
Add the fields you want to the page layout for the end user to review when they click the button. Once you save the layout, you can then predefine all the field values using the related list in the image below.
