In Create Customize List Views - I am trying use opportunity stage as filter for a customized list, but it is not coming up as an option. how can I add this as a filter option?

Go to Opportunities tab and clone existing List View. then, rename it to what you need to and place filters.

See, Opportunity fields as filters will appear only if you are creating a list view on the Opportunity.
