I have some email-addresses that I use to send emails to Lead/Opportunity/Contact. One of this address is my primary SF email, others were added by 2 ways: by Organization-Wide Email Addresses and by connecting new accounts in Einstein Activity Capture.
And after connecting new accounts in Einstein Activity Capture I noticed that my default "From" address in Lead/Opportunity/Contact is not my primary SF email but email-address that is FIRST in list of accounts connected in EAC.
How to set my primary SF email as default "From" address in Lead/Opportunity/Contact?!!

Use predefine values with Email Actions
setup >>>> Object Manager >>>>> {Object} >>>>> Buttons, Links, and Actions >>>> New Action
Action Type = Send Email
Select fields for email action layout and save
Then go to Predefined Field Values to add logic to your fields with static values or formula to give you desired results.
after you have prepared this you will need to replace existing default email action on page layout and replace it with this one. You have to do this on each object.
