Hi Kenneth,
Every one with the Modify All or Read All permission on this object will be able to see it, no matter what (the "System administrator" profile has those by default).
Having said that, you would need to go to set up> Sharing settings and set the org wide default for this object to private
You could then add a criteria based sharing rule on this object:
Name not equal to XXX
Share with Public Group> All Internal Users
Set the access to read only or Read/Write so it gives the same access as everyone had before
Now go to those 2 profiles and select the Read All and/or Modify All permission on this object
