As a matter of fact, you can!
There is an option in Salesforce' User Interface settings to Enable Audit Fields. This lets you, only during the import, set the created date, created by, last modified date, and last modified by values. To clarify, these fields will only be editable on the initial data import, and once the records are in you can no longer change those values.
