Is there any way to remove or change the name of the "Name" field in Leads. I want to either change it to be called "Contact" or remove it all together.

As in a Web to Lead form or the actual Lead detail page?
On a web to lead form you can call the field whatever you want, just change the HTMLOn the detail page you can
Setup > Customize > Tab Names and Labels > Rename Tabs and Labels
Click Edit beside Leads, and then the Next button
Change field names as needed.
