Setting up a monthly open recurring donation, 12 donations were created. I thought the logic for open ended was if the first donation was changed from pledged to closed won, that another donation would be created...always keeping 12 pledged donations.
Am I miss understanding this or is there a better way to test open-ended recurring donations?

Check the settings you have in the section "Open Oportunity Behaviour on RD Close", you find this under NPSP Settings > Recurring Donations > Edit
