On the three dashboard filters, how can we find out which fields were used on the filter?
When I click on edit filter, it is only displaying the label.

You're right, it only displays the label and you can change the label to something other than the field name, and you will not be able to see which field it is.
However, if you apply the dashboard filter, then open up one of the reports. It will show the applied filter at the report level and it will show the name of the field even if the label on the dashboard filter has been changed to something else.
See below: I have changed the label to "Status2" even though the field is "Stage" on Opportunity.
