How can i select 3 stages in Data Loader Filter? Do i have to add condition 3 times?

Yes and the on the basis of the conditions query will be genearted somthing like this:
Select Id,stagename,ownerId from opportunity where stagename='Closed Won ' OR stagename='Closed Lost ' OR stagename='Cancelled '
