approve changes to opportunity fields from a dataloader upload

when I upload changes to opportunities with the data loader, is there a way I can have a list of the changes in a report or in a queue so that they can be approved before they actually change the opportunity fields?

    No. Data jobs update the data immediately.  If you really want to 'approve' the changes, you'd need to upload into a different field (for each field you wanted to Approve), then use some mechanism to approve the new value and use Workflow Rules to update the real field from the 'uploaded field'
