i dont know if this is possible but i would like to try and get a validation on opportunities that stops users to change a record to closed won unless a specific product is added to te opportunity.
Any ideas?

Good catch, Jeff.
Alastair, perhaps you could add a custom checkbox (or number) field to the Opportunity Product object and then use a workflow on creation of an Opp Product to set this checkbox to true (or this number field to 1) if the associated Product Name contains XYZ (or if the Product Family is ABC etc). This checkbox should then appear in your field filter on the Roll-Up, something like 'Is Relevant Product equals True'.
